In the village of Boursault, on the western side of the Vallée de la Marne, Aurore & Florian Laval craft wines that live in complete harmony with their surroundings. Their cuvées are born from a trust in nature—no corrections, no rush, just the rhythm of the vineyard. Les Copains du Bas-Chêne 2022 is an ode to friendship, terroir, and the heritage of old vines. On the Le Bas-Chêne plot, planted in 1968, the Pinot Noir grapes are grown biodynamically on limestone and clay soils that give the wine tension, depth, and elegance.

This still red Coteaux Champenois is made entirely from Pinot Noir from a single vintage and vinified naturally, without cold stabilization, filtration, or additives. Fermentation occurs spontaneously with indigenous yeasts, after which the wine ages for 22 months in oak barrels. Malolactic fermentation is deliberately omitted to preserve freshness and structure. The result is an expressive, vibrant wine with velvety tannins, a subtle oaky note, and a refined, mineral core—a rare and elegant interpretation of Pinot Noir from the Marne Valley.

On the palate, Les Copains du Bas-Chêne 2022 is elegant and precise, with refined tannins and a velvety texture.     The Pinot Noir grapes from the lieu-dit Le Bas-Chêne (planted in 1968) are harvested by hand and carefully sorted. Fermentation takes place with natural yeasts in oak barrels without temperature control. No cold stabilization or filtration is used, so the wine retains its lively texture and pure character. Malolactic fermentation is deliberately omitted to preserve tension and freshness. The wine then matures for 22 months in French oak barrels, which add structure, aromatic complexity, and roundness.

What is Blanc de Noirs Champagne?

Blanc de Noirs means "white from black grapes" and is made exclusively from Pinot Noir and/or Pinot Meunier. Despite the dark grapes, the champagne has a light color because the juice is pressed directly without maceration. Blanc de Noirs champagnes are often fuller, more powerful, and richer in flavor, with notes of red fruit, spices, and a creamy texture.

What is biodynamic champagne?

Biodynamic champagne goes a step further than organic and follows the principles of Rudolf Steiner.
