Champagne Bolieu is a family estate in Bassuet, situated in the exclusive Coteaux Vitryats wine region, a hidden gem in Champagne with just 480 hectares of vineyards. Laurence and Charles Baffard have been at the helm of the estate since 1998, transforming it into a truly exceptional producer with dedication, precision, and a deep respect for nature and the grape.

The terroir of the Coteaux Vitryats is exceptional. After replanting in the 1960s, following the devastating phylloxera plague, the vines were planted only on the mid-slopes, in plots with a southerly exposure. The subsoil consists of millions of years old Turonic limestone mixed with layers of clay, a formation similar to that of the Côte des Blancs, but with greater depth and warmth. This unique composition gives the Bolieu wines their characteristic exotic fruit notes and layered minerality.

Charles Baffard works with almost obsessive precision to preserve the purity of the fruit. He harvests in small crates and brings the grapes to the press every thirty minutes to guarantee absolute freshness. His modern press is designed to minimize oxidation, as are the stainless steel vats with adjustable tops, which allow him to regulate exposure to oxygen. Only the juice from the first pressing, the Cuvée A , is used, the most refined and concentrated part of the grape.

This dedication to purity also translates into his cellar work. Bolieu uses a Perpetual reserve , a dynamic system in place since 2002, ensures that each new vintage remains connected to the preceding generations. For Charles, time is essential; his wines are given the rest they need. A Bolieu champagne is only released when the moment feels right; too young would still have closed character.

The vineyards, some 6.5 hectares in size, are primarily planted with Chardonnay, the varietal in which Bolieu excels and which gives its champagnes their elegant backbone. The southeastern exposure and the old limestone and marl soils produce wines with lively acidity, finesse, and impressive length. A small amount of Pinot Meunier adds nuance and roundness.

At Bolieu, sustainability is more than a principle; it's a way of life. The estate operates organically and according to Haute Valeur Environnementale (HVE) guidelines, respecting the vineyard's natural biodiversity. Moreover, the champagnes are often given additional aging, which adds depth, refinement, and a silky balance.
