The story

The winemaker

Since 1998, the Bolieu estate has been led with dedication by Laurence and Charles Baffard. Their winemaking philosophy centres on patience, precision and a daily engagement with the living character of the grape, which responds differently to its surroundings each year. This approach results in champagnes that are authentic, layered and refined.

The terroir

The estate lies in Bassuet, in the heart of the Coteaux Vitryats, one of the smallest and most exclusive vineyard areas of Champagne, with only 480 hectares. The 6.5 hectares of vineyards sit on south-east facing slopes and are largely planted with Chardonnay, the grape variety in which the estate excels. There is also a small plot of Pinot Meunier used as a nuance in certain blends. The soil consists of ancient Turonian chalk (98.68 million years), combined with calcareous marl and clay, giving the wines lively acidity, depth, length and a gentle fruitiness.

  • Laag op de helling rond Bassuet: meer mergel en klei; rondeur en de licht exotische fruittoets die de Vitryat typeert

Craftsmanship & philosophy

Laurence and Charles work exclusively with organic growing methods and follow the principles of Haute Valeur Environnementale (HVE). Their philosophy is about making the most of the terroir: the soil is prized for its minerality, while the southern exposure brings riper aromas. This combination yields champagnes that offer both freshness and maturity. The champagnes often receive extended ageing, which further deepens and rounds out their character.

Style & highlights

Champagne Bolieu stands out for its refined interpretation of Chardonnay, which makes up more than 95% of the plantings. The freshness is shaped in part by the grape variety and the chalk-rich soils, while the southern exposure together with the extended ageing sur lie brings maturity, complexity and texture. This interplay gives the champagnes of Bolieu their characteristic depth and distinctive style within the Coteaux Vitryats.
