The winemaker
Champagne William Saintot is an independent family estate that has been active in Avenay Val d'Or since 1918. Today the fifth generation leads the house under Morgann Trebutien. Under his direction the estate has grown into a reference for Pinot Noir vinification within the Vallée de la Marne.

The terroir
The heart of the estate lies in Avenay Val d'Or, a Premier Cru village in the Grande Vallée de la Marne, at the foot of the eastern Montagne de Reims close to Aÿ. The vineyards lie mostly on south to south-east facing slopes: this exposure captures plenty of sun and allows Pinot Noir in particular to ripen fully here. Beneath a thin topsoil of clay and limestone lies the region's chalk subsoil, which retains moisture during dry summers while providing drainage, tension and minerality.
This makes Avenay Val d'Or classic Pinot Noir terroir: it yields powerful, structured wines with ripe red fruit and body, while the chalk safeguards the freshness. The rest of the estate lies in the Premier Cru villages of Mutigny and Bisseuil and in the Aube village of Champignol-lez-Mondeville, each with its own soil accent.

Where the grapes grow
- Avenay Val d'Or (Premier Cru): clay-limestone on south-east to south-west facing slopes; structure and minerality.
- Mutigny (Premier Cru): silty soils; elegance and finesse.
- Bisseuil (Premier Cru): compact chalk-rich subsoil; freshness and tension.
- Champignol-lez-Mondeville (Autre Cru, Aube): Kimmeridgian limestone, south-west facing slope; minerality and freshness.
The plantings consist of 85% Pinot Noir, complemented by Chardonnay (12%), Meunier (2%) and a small amount of Petit Meslier (1%).

Craftsmanship & philosophy
William Saintot works plot by plot and with strict selection. Vinification takes place largely in oak barriques (85%), supplemented by oval concrete tanks and stainless steel. Spontaneous fermentation with indigenous yeasts is used; malolactic fermentation is often deliberately avoided in order to preserve freshness and tension. Morgann applies innovative techniques, including fermentation and ageing in qvevri (Georgian amphorae) and skin maceration with intact grapes. Sustainability is deeply woven into the operation: the estate has been organically certified since 2022, alongside HVE level 3 and Viticulture Durable, and works without chemical pesticides.
Style & highlights
William Saintot combines classic precision with forward-looking viticulture. The champagnes are made with natural fermentation and minimal intervention, resulting in wines with structure, depth, length and a distinct identity. Alongside their specialisation in Pinot Noir, they also supply plant material to fellow growers in France and Italy.
