The story

The winemaker

Champagne Aurore & Florian Laval is an independent grower based in Boursault. The Laval family has worked its diverse terroir since 1870. Today the estate is led by the new generation: Aurore, with her deep connection to nature, and Florian, who devotes himself to expressive and experimental vinification.

The terroir

The vineyards lie in Boursault, on the left bank of the Vallée de la Marne. The terroir is marked by alternating slopes with a northern exposure, which brings slower ripening and heightened finesse. The soil consists of a unique combination of limestone, marl and clay, which together create a distinctly aromatic and fresh profile, characteristic of this cool location.

Where the grapes grow

  • Boursault, 9 percelen rond het dorp (alle wijngaarden): klei-kalk met mergel; de basis van elke cuvée
  • Noordhellingen boven de Marne (koele ligging): langzame rijping; spanning en frisse zuren
  • Zwaardere klei- en zandplekken (per perceel anders): 'la Bourgogne Champenoise'; reden om elk perceel apart te vinifiëren
  • Linkeroever Vallée de la Marne (meunier-land): twee derde van het dorp staat op meunier; dé huisdruif

De 6,5 hectare is aangeplant met 70% meunier, 28% pinot noir en 2% chardonnay.

Craftsmanship & philosophy

The estate works entirely biodynamically, without synthetic products. Guided by plant preparations, cover crops and the lunar cycles, Aurore and Florian strive for a living, natural balance in the vineyard. In the cellar they keep intervention to a minimum: they use only natural yeasts, avoid malolactic fermentation and apply neither fining nor filtration. Vinification takes place in various vessels and materials, wood, stainless steel and earthenware, depending on the plot and grape variety.

Champagne Aurore & Florian Laval stands for pronounced craftsmanship and deliberately follows a different path from the traditional viticulture of Champagne. Florian in particular, with his headstrong vision and untameable urge to experiment, leaves a clear mark on the estate. His style is aromatic, lightly oxidative and playful, always with a fresh view of what champagne can be. Together, Aurore and Florian belong to a new generation of vignerons who approach champagne with freedom, curiosity and respect for nature.
