Pale gold in color with a light sheen. The nose opens with notes of lemon blossom, almond, and ripe pear, followed by subtle oaky notes and a hint of white pepper. On the palate, the wine displays tension and elegance: a fresh attack of citrus and green apple that flows into a creamy, rounded core. The oak aging imparts a soft touch of vanilla and almond without overpowering the fruit. The finish is long, mineral, and exceptionally refined. La Mule is a still Champagne wine that effortlessly balances power and subtlety.

The Chardonnay grapes from the Le Moulin La Mule plot are harvested by hand and destemmed immediately upon arrival for a short 13-day maceration in stainless steel tanks. Fermentation occurs naturally with indigenous yeasts, without the addition of sulfites, cold stabilization, or filtration. After maceration, the wine is transferred to used oak barrels, previously intended for red wine, where it ages for 24 months on its fine lees. Malolactic fermentation is deliberately omitted to preserve the Chardonnay's freshness and tension. The resulting wine is bottled without fining or filtration.
What is Blanc de Noirs Champagne?
Blanc de Noirs means "white from black grapes" and is made exclusively from Pinot Noir and/or Pinot Meunier. Despite the dark grapes, the champagne has a light color because the juice is pressed directly without maceration. Blanc de Noirs champagnes are often fuller, more powerful, and richer in flavor, with notes of red fruit, spices, and a creamy texture.
What is biodynamic champagne?
Biodynamic champagne goes a step further than organic and follows the principles of Rudolf Steiner. This means that viticulture is aligned with the lunar calendar and natural preparations are used to strengthen the vineyard. Biodynamic champagnes are often more expressive and reflect the terroir even better. They carry labels such as Demeter or Biodyvin.
What is organic champagne?
Organic champagne is made from grapes grown without synthetic pesticides, fertilizers, or chemical additives. Winemakers use natural methods to maintain healthy soil and vines. Strict rules govern the winemaking process, and the champagne receives an official organic label (such as AB or EU-bio).
What is Extra Brut Champagne?
Extra Brut Champagne contains even less sugar than Brut, between 0 and 6 grams per liter. This results in an extra-dry style with pure, pronounced flavors. Extra Brut is popular with connoisseurs who appreciate a clean, mineral champagne with plenty of freshness.
