Champagne William Saintot - Blanc De Blancs

William Saintot's Blanc de Blancs is a fresh, balanced champagne made from 88% Chardonnay and 12% Petit Meslier, an old Champagne variety that is rarely planted today. The grapes come from the plots around Avenay Val d’Or and Bisseuil, where the Chardonnay is certified organic (FR-BIO-20).

This bottle comes entirely from the 2022 harvest. Around 80% of the wine ferments and matures in oak barrels, the rest in stainless steel. Malolactic fermentation is not carried out, which keeps the acidity taut and lively. Fermentation is spontaneous with the estate's own yeasts, and neither cold stabilisation nor filtration is used.

With 2 grams of dosage this is an Extra Brut. Available in bouteille (75 cl).

    Light golden colour with a fine, persistent mousse. The nose offers citrus and yellow fruit, with a spicy note from the Petit Meslier and the light toast of the oak barrels. On the palate the wine is taut and vertical, as malolactic fermentation is not carried out and the acidity remains fully intact. Ageing in wood adds breadth and a creamy texture. The finish is dry, mineral and long.

    Serve between 8 and 10°C.
    Store in a cool, dark place.

Cold stabilisation and filtration are not used. The dosage is 2 grams per litre, making this an Extra Brut.

Brut Nature (also called Zero Dosage) is the driest Champagne style, with less than 3 grams of sugar per liter or no added sugar at all. This ensures an exceptionally pure expression of the terroir and grapes, with high acidity and a mineral, taut finish.
