The grapes used in Champagne Aurore & Florian Laval Ratafia were carefully selected and harvested, in accordance with the lunar cycles of 2023. After harvest, the grapes were macerated for 18 hours in their must, resulting in the beautiful deep pink color with coppery hues that makes this Ratafia so unique. The process is entirely focused on preserving the pure, natural flavor of the grapes, with alcohol being added during the primary fermentation to halt fermentation and preserve the natural sugars. This technique results in a sweet dessert wine with an alcohol content of 18%, full of fruity notes and a velvety texture. Only sandstone barrels were used for the aging of this exceptional wine. These barrels ensure a refined micro-oxidation, giving the wine a complex, smooth flavor without the intense oak notes often found in wooden barrels.

Ratafia is a sweet fortified wine from the Champagne region, made from unfermented grape juice (malt) mixed with grape alcohol. This prevents fermentation and preserves the natural sugars, creating a rich, aromatic drink with notes of dried fruit, nuts, and spices.

Ratafia is made by mixing freshly squeezed grape juice with distilled grape alcohol. This process halts fermentation and preserves the sugars. The drink is then aged for several months to years in stainless steel tanks or wooden barrels, allowing the flavors to further develop.
Can you store Ratafia for a long time?
Yes, Ratafia has a long shelf life thanks to its high alcohol content (16-18%). An unopened bottle can last for years if stored in a cool, dark place. Once opened, Ratafia will keep for several weeks to months in the refrigerator, although the aromas may fade slightly over time.
What is organic champagne?
Organic champagne is made from grapes grown without synthetic pesticides, fertilizers, or chemical additives. Winemakers use natural methods to maintain healthy soil and vines. Strict rules govern the winemaking process, and the champagne receives an official organic label (such as AB or EU-bio).
What is biodynamic champagne?
