The Pinot Noir grapes for Rosé de Saignée 2016 are hand-harvested and carefully selected. After harvesting, a short maceration process takes place to achieve the desired color and fruit intensity, the characteristic saignée method. Only the first half of the pressing (tête de cuvée) is retained for fermentation. Alcoholic fermentation and aging take place entirely in oak barrels, followed by malolactic fermentation to give the wine softness. After light filtration and a minimum dosage of 3 g/L, the wine is bottled. The combination of older vines, long barrel aging, and small-scale production ensures depth, structure, and pure terroir expression.
What is a Millésime or Vintage Champagne?
A Millésime (or Vintage Champagne) is made from grapes from just one exceptional harvest year and is aged in the bottle for at least three years. This type of Champagne perfectly reflects the climatic conditions of that particular year and often has a more complex and layered character than a non-vintage Champagne.
