On the steep slopes of Boursault, where the sun slowly across the Marne slides, arises the champagnes from La Villesenière, intense, alive and deeply connected with their terroir. Laurence and Cyrille Michez believe that great wine not made, but guided. In their vineyards, planted with old Pinot Noir vines, work they according to the nature: without pesticides, with respect for biodiversity and with an eye for life in the bottom. So each cuvée gets its own rhythm and personality.

Rosé de Saignée 2016 is the epitome of that philosophy, a champagne that combines pure Pinot Noir power with finesse. From 55 year old vines on clay, limestone and sandy soils, vinified in 100% oak, is this rosé it result of craft and intuition. The grapes are carefully hand harvested and light macerated to the natural color and expression of the fruit to record. Only the first pressed juice ( Cuvée A ) is used, followed by a complete malolactic fermentation and maturation in barrels. The dosage of 3 g/L underlines the tight, dry character while the wood provides For elegance and roundness. Only 1,352 bottles were produced.

The nose opens with aromas of wild strawberry, raspberry, and red cherry, complemented by notes of pink pepper, almond, and brioche. The palate is full and vibrant, with a layered interplay of ripe red fruit, subtle woody notes, and refined acidity. The structure is firm yet elegant, with the mineral veining of Boursault adding depth. The finish is clean and long, with notes of orange peel and red fruit. Rosé de Saignée 2016 is an expressive, gastronomic champagne that perfectly harmonizes power and refinement.

  • Productieproces

    The Pinot Noir grapes for Rosé de Saignée 2016 are hand-harvested and carefully selected. After harvesting, a short maceration process takes place to achieve the desired color and fruit intensity, the characteristic saignée method. Only the first half of the pressing (tête de cuvée) is retained for fermentation. Alcoholic fermentation and aging take place entirely in oak barrels, followed by malolactic fermentation to give the wine softness. After light filtration and a minimum dosage of 3 g/L, the wine is bottled. The combination of older vines, long barrel aging, and small-scale production ensures depth, structure, and pure terroir expression.

What is a Millésime or Vintage Champagne?

A Millésime (or Vintage Champagne) is made from grapes from just one exceptional harvest year and is aged in the bottle for at least three years. This type of Champagne perfectly reflects the climatic conditions of that particular year and often has a more complex and layered character than a non-vintage Champagne.

What is Extra Brut Champagne?
