On the sun-drenched slopes of Bassuet, in the heart of the Coteaux Vitryats, Laurence and Charles Baffard create champagnes that reflect the pure character of limestone and time. Carnet de Leone is a personal cuvée, named after their daughter Léone, and symbolizes a family history where patience and craftsmanship come together. Here, the winemaker does not control nature, but guides it; the vitality of the grape is given free rein.

This 100% Chardonnay comes from vines over 40 years old from the Coteaux Vitryats, planted on southwest-facing plots with a subsoil of ancient Turonian limestone. The cuvée consists of 85% wine from 2017 and 15% reserve wine from a solera system, which gives the wine depth and continuity. All vinification and maturation take place in oak barrels, with which Carnet de Leone develops its subtle tension between freshness and roundness. A completed malolactic fermentation softens the acidity, while a limited dosage of 4 g/L emphasizes the pure style of Bolieu. Only 1,000 bottles have been produced, a champagne that unites elegance, minerality and gentle power in one glass.

    Bright straw yellow with a fine, lively mousse. The nose reveals notes of ripe lemon, hazelnut, brioche, and white peach, complemented by subtle aromas of vanilla and lime. Refined and complex on the palate, it perfectly balances richness and precision. The flavors of citrus, honey, and almond are supported by a creamy texture, elegantly rounded out by mineral freshness. The finish is long, pure, and layered. Carnet de Leone is a champagne of rare elegance, vividly capturing the soul of the Coteaux Vitryats.

    Serve between 10 and 12°C.

  • Productieproces

    For Carnet de Leone, only the grapes from the first pressing (Cuvée A) are used, harvested from Chardonnay vines over 40 years old. After gentle pressing and natural sedimentation, fermentation takes place in 100% oak barrels, with continuous bâtonnage to develop texture and balance. Malolactic fermentation is carried out entirely for a softer palate. The blend comprises 85% 2017 vintage and 15% soléra reserve, which has been maintained for years for consistency and layering. After extended maturation on lees, the blending, bottling, and dosage of 4 g/L follow. The result is a wine of exceptional finesse, harmony, and length.
