In the village of Bassuet, amidst the charming slopes of the Coteaux Vitryats, Laurence and Charles Baffard have been crafting Champagnes since 1998 that display a rare balance between freshness and ripeness. Their estate, Champagne Bolieu, rests on a terroir that is literally alive: ancient Turonian limestone, millions of years old, permeated with marl and clay. Here, the vines thrive at a natural rhythm, guided by patience and respect for the soil.

Pépin de Vigne perfectly embodies this philosophy. The cuvée consists of 70% Chardonnay and 30% Pinot Meunier, a refined blend of wine from 2021 (66%) and 34% reserve wine. Both grape varieties come from the Coteaux Vitryats: the Chardonnay brings freshness and minerality, while the Meunier adds softness and fruit. Vinified in 100% stainless steel to preserve the pure character of the grape, the wine underwent full malolactic fermentation and matured on its fine lees, which provides roundness and complexity. With a dosage of 4.5 g/L, Pépin de Vigne remains elegantly dry, but with just that hint of warmth that makes the wine approachable and harmonious. The south-western exposure of the vineyards and the Chablis pruning system contribute to optimal ripeness and full expression.

    Straw-yellow in color with a brilliant sheen and a fine, persistent mousse. The nose is inviting and refined, with notes of white fruit, flowers, and brioche, complemented by subtle hints of lime and almond. On the palate, Pépin de Vigne presents itself in balance: the vibrant citrus freshness of the Chardonnay meets the soft, fruity roundness of Pinot Meunier. The texture is creamy yet taut, the finish mineral and pure. A champagne that effortlessly balances elegance, tension, and smoothness – entirely in the spirit of Champagne Bolieu.

    Serve between 10 and 12°C.

  • Productieproces

    Pépin de Vigne grapes are hand-harvested from vines averaging 20 years old, planted on limestone slopes with a southwesterly exposure. After light pressing, the must undergoes natural fermentation in stainless steel vats, with carefully controlled temperatures to preserve delicate aromas. Malolactic fermentation is carried out entirely to soften the freshness and achieve a creamy texture. The wine is then aged on its lees to develop structure and complexity. The final blend contains 66% base wine from the 2021 vintage and 34% reserve wine, with a dosage of 4.5 g/L, resulting in a careful balance between freshness and ripeness.
