In the small village of Bassuet, nestled amidst the rolling chalk hills of the Coteaux Vitryats, Laurence and Charles Baffard craft champagnes that follow nature's rhythm. Their domain, Champagne Bolieu, embodies patience, precision, and respect—a daily dialogue between human and terroir. Cordon de Rosé is the expression of this refined balance: a champagne where Chardonnay captures the light of the limestone, while a touch of Pinot Meunier adds softness and color.

This cuvée consists of 90% Chardonnay and 10% Pinot Meunier, with 85% wine from 2019 and 15% reserve wine. The grapes come from vines averaging 30 years old, rooted in the chalky soils of the Coteaux Vitryats, where a southwesterly exposure ensures ripe aromas and natural intensity. Vinification took place entirely in stainless steel to preserve fresh precision, followed by full malolactic fermentation to soften the acidity and build complexity. The blending method for this rosé yields a delicate hue and subtle red fruit character without overpowering the refined profile of the Chardonnay. With a dosage of 11 g/L, Cordon de Rosé offers a generous, fruity style with a silky-smooth texture.

    Salmon pink in color with a refined mousse and vibrant sparkle. The nose opens with aromas of fresh red fruit, strawberry, raspberry, and subtle cherry, complemented by notes of brioche, almond, and citrus blossom. On the palate, Cordon de Rosé is supple and generous, with a refined creaminess and freshness that harmonize elegantly. The flavors of red fruit and a light spice flow into a long, refreshing finish. A champagne with allure: delicate, seductive, and steeped in the characteristic chalky terroir of Champagne Bolieu.

    Serve between 10 and 12°C.
    Store in a cool, dark place.
  • Productieproces

    The hand-harvested grapes are gently pressed, using only the juice from the first pressing (Cuvée A) to ensure maximum purity. The base wines are fermented separately by grape variety in temperature-controlled stainless steel tanks. Malolactic fermentation is carried out entirely for roundness and balance. For the rosé color, a precise blend of white wine and a small amount of red Pinot Meunier, vinified in still red, is made. The wine is then aged on lees before being bottled at a dosage of 11 g/L, a perfect balance between freshness and charm.
