In the heart of the Vallée de la Marne, where the clay and limestone soils radiate a vibrant energy, Régis Poissinet creates champagnes that speak to the voice of nature. Les Clos Paillot 2018 is a pure expression of this principle, a wine from a single lieu-dit, where biodiversity and soil movement work together in perfect balance. Poissinet allows his vineyard to breathe and listen, trusting intuition, the phases of the moon, and the rhythm of the land.

This limited edition cuvée (only 628 bottles) is made entirely from Pinot Meunier, sourced from 35-year-old vines deeply rooted in rich clay and limestone soils. The grapes from the first pressing (Cuvée A) fermented spontaneously with indigenous yeasts in oak barrels, after which the wine matured for a further two years on its own lees. Malolactic fermentation was carried out entirely, with no cold stabilization or filtration. Cork aging and a dosage of just 2 g/L ensure an unpolished yet refined expression of the terroir.

Les Clos Paillot 2018 reflects the pure character of Meunier: round, powerful, yet with a mineral precision. This biodynamic champagne combines structure and elegance in perfect balance.

    Golden yellow in color with a lively, fine mousse. The aroma reveals notes of ripe peach, almond, brioche, and light spices, supported by floral accents. On the palate, the wine is full and silky, with a creamy texture and flavors of honey, apricot, and subtle vanilla notes from the oak aging. The balance of ripe fruit, freshness, and minerality makes this champagne exceptionally precise. The finish is long, elegant, and harmonious. Les Clos Paillot 2018 is an ode to purity and craftsmanship.

    Serve between 10 and 12°C.

  • Productieproces

    The grapes were hand-harvested and selected from the lieu-dit Les Clos Paillot. Only the first pressing (Cuvée A) was used to preserve the finesse and purity. Natural fermentation took place in 100% oak barrels without the addition of yeasts or stabilizers. After complete malolactic fermentation, the wine was aged extensively on its fine lees in barrels before being bottled under cork aging. No cold stabilization or filtration took place, allowing the wine to retain its lively structure and aromatic integrity.
