Champagne Régis Poissinet - L'Émergente

A lively and characterful champagne that showcases the expertise of natural viticulture. L'Émergente is blended from 77% Pinot Meunier and 23% Chardonnay, sourced from clay and limestone soils in the Vallée de la Marne. The base wines from 2018 to 2022 are enriched with 11% reserve wine and are aged partly in oak (22%) and partly in stainless steel (78%).

Fermentation is completely natural, without cold stabilization or filtration, and includes malolactic fermentation for added depth and smoothness. With a modest dosage of 3 g/L (Extra Brut), this biodynamic wine reveals a refined balance of freshness, creamy texture, and mineral tension.

    L'Émergente displays a bright golden yellow color with a fine, lively mousse. On the nose, it opens with ripe aromas of pear, yellow apple, and a hint of brioche, followed by subtle notes of white flowers and almond. On the palate, the wine is full-bodied and creamy, with layers of honey, citrus, and a light spice from its oak aging. The balance between freshness and structure is precise, with a clean, mineral finish that is elegant and long-lasting. A champagne with energy, refinement, and depth.

    Serve between 10 and 12°C.
    Store in a cool, dark place.
  • Productieproces

    L'Émergente was vinified 22% in oak barrels and 78% in stainless steel tanks. Temperatures in the stainless steel tanks were carefully controlled to preserve aromatic precision, while oak aging added structure and complexity. Natural fermentation occurred spontaneously with indigenous yeasts, without cold stabilization or filtration. Malolactic fermentation was carried out entirely. The wine was bottled according to the biodynamic lunar phase and underwent extended aging on lees in the bottle for added depth and finesse.
